1.大盆中加一勺盐和适量温水,放入腐竹泡浸25分钟。

2.泡发的腐竹切成约3cm的段。

3.锅内烧开水,将腐竹放入锅中煮一下。

4.煮好的腐竹冲两三遍凉水,沥干水份。

5.蒜切末、指天椒切圈、香菜切段。

6.碗中加入油炸辣子、生抽、花生油、芝麻油、盐、鸡精,拌匀调成凉拌汁。

7.腐竹放入大碗,加入调制好的凉拌汁拌匀,腌制十分钟。

8.最后放入蒜末、指天椒、香菜段拌一下。

小窍门&温馨提示
1、泡浸腐竹用开水容易烂掉,用凉水泡浸时间太长,建议用温水加点盐这样腐竹很容易泡发而且均匀。
2、腐竹入锅煮一下后要冲两三遍凉水,这样最后做好的腐竹口感会更好。
